Nicolai is a staff writer for The Infatuation Austin. After spending a few years photographing food for various publications, he decided it was finally time to start eating it. Nicolai moved to Austin in 2008 to attend the University of Texas and get a biology degree that he has yet to find a use for. Since then, he’s worked in kitchens, operated his own pop-up restaurant, and quickly earned a name for himself on both sides of the Austin food scene. These days, you can usually find him walking around town, reviewing restaurants, and getting into passionate debates about what constitutes a sandwich.
