Swiss Butter, a steak spot near Russell Square, is all about the sauce. A creamy, peppery, citrussy sauce that’s best soaked into sliced baguette or used to drench skinny fries until they’re soft. A meal here revolves around it. The industrial space, with exposed brick and a strong coffee-shop-in-Shoreditch feel, is great for unfussy groups where everyone orders the same thing and minimal thinking is required. Students pile in for £20 steak and chips, friends gather to catch up over the molten chocolate dessert, and couples sit at the bar waiting to be seated. You’ll find better steak in London, but you won’t find the Swiss Butter sauce anywhere else.
