CH y LA Birria is a strip mall spot in Compton that makes some solid birria de res, but there’s a trick to ordering here. The beef itself is great. It’s juicy, shreds beautifully, and absorbs the consommé, but is also underseasoned, no matter how much salsa you douse it in. Get the quesataco instead, which adds a needed layer of salty melted cheese. Still, the carne en su jugo—a stew with beans, beef, and smoky bacon bits—is the best thing on the menu, especially with a spritz of lime. It’s surprisingly light, so plan to add a quesataco on the side if you’re hungry.
