Herbivore

Herbivore in Bridgeport deserves it's own Las Vegas show because the vegan counter-service spot is a master of illusion. Big Max is an almost identical (dare we say, better) version of its source of inspiration with meaty Impossible patties, creamy special sauce, and melty “cheese.” The crispy fried “chicken” is delicious in every form—in a sandwich, on top of alfredo pasta, or in snackable nugget form. Though the tiny space only has a few tables and counter seats and gets kind of busy, most people are just ordering take-out, so it’s pretty easy to dine in.
