The casual Japan Center spot is the easy answer when you need a last-minute dinner, a low-stakes date, or a meal with a group who has a mixed bag of dietary restrictions—the housemade noodles can go with everything from shrimp tempura to beef curry to spinach cream sauce and smoked salmon. Overwhelmed by the choices? Tonkotsu all the way. It’s got a rich and spicy pork and fish broth that soaks into the slippery udon, and the side of fish powder that goes with it adds an extra umami punch. Tables are walk-in only here, so if there’s a wait, you can wander the mall or plop down on a bench outside.
