Parked at Bouldin Acres, CM Smokehouse is a trailer that’s run by Cade Mercer, who’s worked at places like Lambert’s and EastSide Tavern. The menu features more traditional barbecue offerings like pulled pork sandwiches and Frito pie, but then there are also more creative and untraditional things like smoked-and-fried baby back ribs, a brisket Philly cheesesteak, and a Taco Bell-inspired brisket crunchwrap. There’s also some very good barbacoa quesabirria tacos, made with smoked beef cheeks and served with a consome for dipping as well as a bright and lively salsa verde.
