It’s stuffed with well-spiced short rib (from nearby Daeho), topped with mozzarella cheese, and then torched until bubbly and charred. It's just one of many examples of the pastry wizardry going down at this Japantown bakery. The nicely balanced flavor combinations usually involve a Japanese and Korean twist: cream puffs are generously filled with hojicha or matcha cream, and the injeolmi croissant covered in chewy rice cake and roasted soybean powder is perfectly stretchy.
