We’ll admit that we don’t have food trucks quite like Portland and LA do. But we do have a Mexican-Vietnamese food truck, where you can order a clear Solo cup brimming with tart ceviche, and an indulgent rice pudding-stuffed donut that seems to spill from its sugar-dusted dough before you even take a bite. The menu at Marisquería Veracruz skews Mexican, with tacos and aguachile, but there’s also phở, and a cross between a torta and a banh mi, which you can get with things like fried fish and pork belly. They’re usually on Staten Island Monday, Wednesday, and Friday, and in Sunset Park the rest of the week, but check Facebook for updates. In case you’d like to celebrate your birthday by drowning in a buffet tray of beautifully marinated fish, they also cater.
