We don’t love The Cookie Counter just because the interior looks like a kindergarten classroom for unicorns. We also love it because of how convincing its vegan ice cream is. Go ahead and smush the (very delicious) mint chip and chocolate flavors in a huge waffle cone, and your dairy-eating friends will never know the difference. Don’t leave without getting a homemade fudgy brownie, too.
