Pinsa Rossa
This Pacific Heights restaurant makes Roman-style pizzas with the utmost attention (the same with which we honor our weekly hair-washing schedule). The laser-focused pinsa scientists turn out oblong discs with puffy crusts that look dense, but actually snap and then deflate nicely when you bite into them. Go for the one with spicy salami draped across the top, or the prosciutto and arugula with a sweet balsamic drizzle. The shiny, red-and-black dining room includes a bar and some private-ish upstairs seating, but we like sitting downstairs by the big windows and watching Fillmore Street’s designer dogs trot by.
