This neighborhood wine bar that opened near the Canal Saint-Martin in early 2019, is now fully focused on hosting visiting chefs from around the world to stay for a few weeks (or months) while cooking a set menu of their own cuisine. The shift began in 2021, once restaurants started to reopen, and it’s taken off with buzz-creating pop-ups featuring the wildly varied cuisines of Myanmar, Vietnam, Denmark, and more. Check Instagram to know who’s next and get there early if you don’t want to wait. The low-key space with wooden tables and white concrete walls fills up quickly and they don’t take reservations.
