The chef’s name at Vidalia is Sal, a fact he’ll almost certainly tell you himself sometime between when you open your first bottle of wine and finish your last slice of cheesecake. Sal’s inevitable table approach is like every other aspect of dinner at this BYOB Italian spot in Lawrenceville in that it’s predictable and thoroughly enjoyable. You’ve seen all of the dishes on the menu here at countless other Italian spots in Jersey, and yet that doesn’t make the crispy, bechamel-filled baked lasagna any less of a must-order, or the small dining room and new outdoor courtyard any less ideal for a casual date night.
