There’s a cliche when writing about plant-based food, wherein the writer says something like, “It’s so good that you can’t even tell there’s no meat!” We told ourselves not to do that, but we are sort of going to do it here (sorry, us!) by saying the following: you won’t really even notice that all of the food at Sunday is plant-based because it’s just really great—and not by vegan standards, but by the universe’s standards. Sunday is a food truck that bounces around Miami and operates out of Space Park during the weekend. They have a really interesting rotating menu that defies categorization. We've seen dishes here like ropa vieja and grits, a banh mi with mushroom pâté, and an incredible poppyseed tres leches. It's all been phenomenal, and also the reason why we always keep an eye on Sunday’s Instagram for the most current info about where it’s parked.
