Seabirds started out as a food truck back in 2010, and now the vegan spot has two brick-and-mortar restaurants and a third opening soon. If Anthropologie opened a restaurant, if would look a lot like their airy Long Beach location: filled with bright pastel walls, hanging plants, and tableware you actually want to look at and touch. And instead of shopping for summer dresses, you can eat things like al pastor-style jackfruit tacos, housemade burger patties served on vegan brioche buns, and creamy butternut squash enchiladas. It’s the kind of casual, sit-down vegan spot that makes delicious food highlighting vegetables rather than just swapping in meat substitutes.
