Run by the team behind Bells, a fantastic French bistro in Los Alamos that we’d happily drive two and a half hours for, Bar Le Cote is a new seafood restaurant inspired by the European seaside. You’ll find it in Los Olivos, a small town in the Santa Ynez Valley, serving dry-aged kampachi crudo, beef tartare with fried oysters, halibut wrapped up in serrano ham, vegetable corn paella, and Spanish citrus olive oil cake for dessert. If you’ve been watching a ton of black and white films on the Criterion Channel lately, this restaurant might just be for you. Walk-ins only, beer and wine to come.
