There is one word that comes to mind when we think of Kindling and that is ‘delightful’. This place is an excellent shout if you’re looking for somewhere to have a fancy lunch, a foliage-filled Brighton date, or to eat a Saddlescombe mutton burger that will have you cursing every sad Big Mac you’ve allowed to touch your brioche-loving lips. A light and airy small plates restaurant near the seafront, it’s run by an ex St. John chef, and as you might expect with this kind of heritage, Kindling is all about quality seasonal produce. Although the menu changes regularly, you can expect dishes like wild garlic and ricotta gnudi, exceptional seafood, and tarted-up vegetables complete with crispy chickpeas. See, delightful.
