Nobu might have locations all around the world, but the one in Caesar’s Palace is a consistently great upscale option for a celebratory night.

Hatsumi is a Japanese restaurant downtown with a long bar and a few booths where you’ll eat skewers and interesting small plates.
Shark, right next to Kaos in the Palms, is a great place for dinner before a night out, with a mostly-seafood menu with some twists.
Libertine Social in the Mandalay Bay is where you should start your night of hotel-hopping; get a good cocktail and share a few small plates.
