Xi’an Cuisine in Chinatown has some great noodle dishes, and that’s what you should focus on when you’re here. Particularly the lamb noodle soup with hand-stretched noodles and tender pieces of meat, or the biang biang noodles with pork, tomato, egg, and beef, both of which have a lot of flavor and just the right amount of spice.
