When Roister opened back in 2016, their chamomile chicken was one of the best plates of food in the entire city. Now, the person responsible for that beautiful creation runs a virtual restaurant that’s operating out of Devil Dawgs in Wicker Park. And we can say that the sandwich from Brochu might be even better than its predecessor. The juicy thigh has a thick, wonderfully crunchy batter, and comes with a delicate chamomile mayo that will feel familiar to anyone who ate the original. It’s topped with shredded lettuce and pickles and has a satisfyingly dense bun that holds up to the filling.

There’ve been a lot of collaborations between restaurants this year, especially when spots that planned on opening in 2020 had their plans fall through. Brochu is one of these spots that, instead of opening a brick and mortar in West Town, is operating out of Devil Dawgs in Wicker Park under the name, “Friend Of The Devil.” And that’s where I found their fried chicken sandwich. Even in a sea of very good fried chicken sandwiches, this one manages to stand out: the juicy thigh has a thick, wonderfully crunchy batter that’s especially good on top of their chamomile mayo.
Brochu is from a former Roister chef - the one responsible for their famous chamomile chicken dish - and was supposed to open a brick-and-mortar last spring. Well, that got derailed, so now it’s a virtual restaurant that’s operating out of Devil Dawgs in Wicker Park. The menu is focused on fried chicken, sides (like BBQ corn or slaw), and a fried chicken sandwich that’s absolutely fantastic. It has a thick, wonderfully crunchy batter, and comes with a delicate chamomile mayo that will feel familiar to anyone who ate the original at Roister.
