When it comes to creative flavor combinations, we’re big fans of the donuts at Brite in Fulton Market. Flavors rotate frequently, but we’ve seen versions like tangerine Pop Rock (filled with citrus pastry cream and topped with vanilla glaze, candied tangerine, and pop rocks), an horchata donut filled with almond cream and topped with caramel and cinnamon rice crunchies, and the “thin mint” which is way better than its cookie namesake. But our favorite is the banana chai. It’s filled with cold brew pastry cream, glazed with banana chai tea, and dusted with banana powder. It’s an oddly refreshing donut, and we’re not sure why all that works together, but it does. Just be aware, you need to place orders at least 24 hours in advance.

Brite is a brand new bakery in Fulton Market from two former Publican pastry chefs. And like Bayes, you need to plan ahead for this spot, since pickup orders need to be made the day before. The menu has creative baked goods like sweet potato donuts topped with BBQ graham crackers, a cold brew cream donut with blueberry glaze, vegan earl grey sticky buns, and apple thyme sesame morning buns. Oh, and they also have a bunch of seasonal pies available for pre-order, too.

Brite is a brand new bakery operating out of Metric Coffee from two former Publican pastry chefs. And this spot still has Thanksgiving pies available for pre-order. Choose from flavors like caramel apple, sweet potato gooey butter cake, pean, or get the Thanksgiving Pie Sampler, which is three full-sized pies for $95.

I ordered from here while hunting down the best new donuts in Chicago. And Brite earned its spot on this list not just for their fun donuts (with flavors like tangerine pop rock, banana chai cold brew, and grapefruit brulee) but also for their pastries. They make one of the best pecan sticky buns I’ve ever had. But before you run over there immediately after reading this, be aware that you need to order 24 hours in advance. But don’t be like me and let the thought of planning that far into the future intimidate you - I’m disappointed I didn’t order from here sooner.
