It may be a simple cocktail, but that doesn’t mean there isn’t an art to making a gin and tonic. The secret? Make sure you order one with The Botanist Islay Dry Gin.

To celebrate the hopeful spring season and support local bars and restaurants as they rebuild for the future, The Botanist is donating $5 to the Independent Restaurant Coalition for every Botanist & Tonic sold during April and May, up to a total donation of $25,000. Kicking off on National Gin & Tonic Day on April 9, here are some participating locations to find a Botanist & Tonic in Chicago.

The Spots

The Dandy Crown

The Dandy Crown in River West scores major points in three key areas. One, they’ve got a heated patio. Two, it’s got two beautiful floral murals, and three, they’ve got Botanist & Tonics. You can welcome spring (and this unseasonably warm weather) by enjoying a cocktail on their patio, along with some of their delicious adobo brussel sprouts.

Proxi

Where would the world be without the gin and tonic? Thankfully we’ll never know, and Proxi in Fulton Market is one of the reasons why. You can sip your cocktail at this American brasserie by dining in (reservations are limited) or by ordering take out via their website.

Neon Wilderness

$$$$ 1270 N Milwaukee Ave

Sure Neon Wilderness has a bevy of champagne, beer, and spirits, but importantly for our purposes, they’ve also got very good Botanist & Tonics. They’re open late night so have one (or a few) at the Wicker Park bar whenever you like.

Pizza Lobo

$$$$ 3000 W Fullerton Ave

Pizza Lobo is relatively new, but it understands Chicago is a pizza kind of town (to say the least). They also get that pizza goes with everything, including cocktails. They’ve got plenty of toppings and plenty of drinks, along with many ways to enjoy both - including a pick-up window, a heated patio, and of course by dining in.

Mesler Kitchen

The Sophy is a new boutique hotel in Hyde Park with a sophisticated vibe, so it’s a given they offer Botanist and tonics. It’s the kind of place that really elevates the clean simplicity of a gin and tonic by garnishing it with a slice of citrus or fresh herbs to the whole experience to the next level. Good thing we like fancy.

Blind Barber

Straight-edge razors plus Botanist & Tonics equals classic. Get a cocktail Thursday to Saturday at the Fulton Market Backroom Bar where a DJ is always spinning the latest hits.

Good Measure

How about a gin and tonic for Good Measure? You can get one here starting April 2nd for takeout and April 7th for dine in. Pair your drink with one of their incredible burgers for a good time.

What do tacos and Botanist & Tonics have in common? They both go with everything. Have a few of both at the River North bar that is now accepting limited indoor reservations.

Persona

It’s always a good time at Persona and a Botanist & Tonic would only take it up a notch. Listening to a live DJ set Thursday to Saturday at this South Loop spot is the perfect way to enjoy a cocktail in our books.

The Violet Hour

The Violet Hour has a James Beard Award, so you can imagine how good a Botanist & Tonic will be here. Sip your drink on the bar’s patio or while enjoying its ever changing indoor mural.

Kumiko

Kumiko is holding off on indoor dining, but you can still get your fix with Kumiko Omochi-Kaeri, which translates to, “pick up and take home.” Pair a Two Island Gin & Tonic (made with The Botanist, yuzu-saké, tonic, mint, and salt) with this Fulton Market bar’s new bay scallop salad: Peruvian bay scallops basted in brown butter with fresh citrus supremes, purple and green daikon, dressed with a winter citrus ponzu and yuzu extra virgin olive oil, dusted with cracked black sesame seeds.
