We cringe a little on the inside every time we hear the word “fusion,” but Valsos is making us reevaluate our Pavlovian reflexes. Most of the dishes here are Colombian-inspired, though they are also influenced by other cuisines (the arepas, for instance, come with duck confit). Perhaps more importantly, the different flavors taste good together, and virtually everything we’ve had here was cooked perfectly. Maybe the Valsos team could also collaborate with the snack industry so we never have to see Pecan Pie Pringles again.
