You’ve heard of tableside guac. But we’re guessing you’ve never come across tableside queso flameado, unless you’ve been to a dinner at Vaqueros near the Barton Creek Square Mall in Westlake. It all starts with a ripping hot skillet, a pile of peppers, and a few scoops of chorizo. Everything starts to gently sizzle before your server piles on a mound of shredded cheese and some oil, then flicks a lighter while you watch the whole thing turn into a small mountain of cheesy magma. Most of the food at Vaqueros is exactly what we want out of a good neighborhood spot—the enchiladas are tasty, and the fajitas are tender—but the tableside queso is worth a trip alone. There’s also got a location in Steiner Ranch if you find yourself out a little farther west of town.
