Polvo’s offers a fantastic “queso flameado,” which is more associated with interior Mexican cuisine and involves fire. They also make their own tortillas here, which are a far sturdier vessel for this dense cheese dish stuffed with chorizo. If that sounds like a lot to handle, you can always go the conventional queso route at Polvo’s - just know it’s not quite as exciting.
You come to Polvos for the dirt cheap margs, a no-bullsh*t attitude, and the all-you-can-eat salsa bar. We love it here. Come with a crew, get drunk, and eat all the food. Go heavy on the fajitas.
