With 18 courses, at least six chefs, and a three-hour runtime, a meal at Blanca plays out like a culinary thesis show—equal parts inspiring and exhausting. This tasting menu restaurant in the back of Roberta’s in Bushwick has very little to do with pizza, and the host who walks you past four rooms to Blanca’s 12-seat counter is giddy to let you in on the secret.

A huge open kitchen is key. As you wait for each course, watch chefs grill crabs, scrape out oyster conches, and prepare sea-flavored foams. Their stamina is impressive, but yours should be too. Some dishes, like a huge chunk of tortilla roscondo with chicharon, or three-week aged pheasant, are inspired, but every miss makes the meal feel three times longer. At $275, this is only for food nerds who are excited by experimentation.
